Salted Honey Caramel Cheesecake Cupcake
vanilla graham cake, vanilla cheesecake filling, whipped cream, and housemade honey caramel, finished with coarse salt.
They were all out of the Minnesota Nice Cookies :(
From Chris:
We meet at Groundswell on Thomas Ave in St Paul between
Snelling and Lexington Ave. My selection was based on sitting outside and
the weather was perfect for us.
Groundswell is a coffeeshop that also serves food. The
flatbread must be popular, as they were out when we first tried to order.
Food we OK, Lisa’s BBQ chicken was the best and Sharon thought her meatloaf was
too spicy. Enjoyed the evening. Here are a few updates from those
that were there:
Jennifer: Dad & Sharon are moving to Tucson,
AZ. They visited recently and bought a townhouse. Their home here
in MN is already on the market. They hope to both be living in AZ by
September. Jennifer also share about her guests from Masadonia in May for
McCallaster’s graduation. They didn’t like our American food (except TATOR TOT CASSEROLE!), but were
extremely gracious and as always Jennifer & Eric where great hosts in
showing them our sights and hosting Elim’s graduation party.
Jennifer has packed her cowboy boots and is headed to Nashville for the weekend
to meet friends.
Lisa: Ending job at King of King’s at the end of the
month. Abbey spent the month of June singing around the state. Their
family went to Ohio last week and Lisa returned with a bum toe. Soon they
are headed east to celebrate Dave’s parents anniversary and do some more college
visits.
Sharon: Sylvia is a counselor at Luther Crest this
summer, and as such is helping with a mission trip on the Pine Ridge Indian
Reservation in SD this week. She was home last week and they attended
fireworks at the Capitol on the 4th of July. Stephanie got her
driver’s license Monday and is busy with guard. Both girls will be at
EP’s band camp in August and they will do a family vacation to Colorado in August as well.
Chris: Nice night so rode the scooter to ED.
Have been riding several times this week. We are enjoying April’s
summer schedule with us. Went camping for the weekend with lots of
bugs.
Jenny: Calif for work and/or
business
Stacy: parents are in town;
thinking she went with them to see Dana volunteering at horse camp
Wendy: gymnastics, swim &
softball
