We
met at Quang on Eat Street in Minneapolis. We were a small group again: Sharon,
Jennifer, Jenny and Lisa. Wendy was doing the single parent thing, Chris was
spending time with her mom and Stacey was running the kids in two different
directions.
The
restaurant was a very busy Vietnamese place that had been recommended by my
neighbor, Morgan. It is Jennifer's step-sister's favorite place to eat when she
comes to town! Just as we were deciding what to order, a friend of Jennifer's
passed by our table. She recommended #310 and #409. So, of course, I ordered
409- a wonderful chicken and vegetable stir fry. Jennifer and Jenny ordered
310, a great beef and egg roll noodle salad. Sharon was brave and ordered the
pad thai even though it was listed as spicy on the menu. I think we all agreed
that the food was delicious.
Updates:
Jenny
shared about her work trip and adventure to the frontier of Alaska. She spent a
day presenting to a group of medical professionals before heading out on a
fishing boat with some colleagues. They traveled 60 miles out into the water,
accompanied by humpback whales and eagles. The group caught lots of halibut,
golden eye and salmon. They then spent the night on an island in a cabin. The
family who owns the cabins grilled their fish for dinner! She said it was a
great trip, but probably a once-in-a-lifetime experience. She was headed to
Chicago for Sam's registration weekend at Loyola. Jenny and Dan were going to
celebrate their anniversary with a night in the city of Chicago.
Sharon
has been busy with graduation parties, traveling to NYC with the Angelica
Choir, taking Sylvia to Luther for registration and spending time with the Kaare
cousins both here and in Cambridge. She had just returned from a peaceful
weekend at Steve's parents' home. The kids and Steve spent time doing lots of
jobs for Steve's parents while Sharon and Steve's mom prepared meals for
everyone. She said they spent lots of time enjoying the screened porch and
fireflies.
It
was fun to hear about Sam and Sylvia's preparations for college. It is so hard
to believe that we will have 2 college freshmen in our Ethnic Dining family
this fall. The time has gone by so quickly!
Jennifer
has been busy traveling for work and pleasure. She shared about her trip to St.
Croix, USVI. She and Eric joined her Jackson High friend, Nancy and her
sister-in-law, who were on an trip to explore the possibilities of owning
property on the island. Jennifer's highlight was swimming a mile in the ocean
and looking down to see a HAMMERHEAD shark swimming beneath her! Yikes! She
said it was incredible and would not frighten her away from swimming there
again. The other swimmers consider Jennifer their good luck charm! Jennifer's
mom and step-dad will be visiting soon and Eric's nephew will be coming for a
visit in August.
I
(Lisa) has been busy with the adventure of selling her house. It has been a
series of ups and downs, but the house is sold! We will be moving into an
apartment for a couple of months before our new home is finished. They have
started framing, so things are moving along. It is nice to be focusing on the
next steps now!
